considering the SpeedEst and dyno don't quite agree, and you stall (estimator may be losing sync) I'd guess the Ls value took a guess on is not correct.
Try lowering this to say 40uH (lower Ls is always better than having too high of Ls) and see if the SpeedEst and torque capability improve.
